Chef Frank Barajas of the newly opened Pequín Coastal Cocina at Vespera Resort, Baja-Coastal cuisine is highlighted by dishes that offer truly authentic Mexican food created with innovative whimsical touches. This season Chef Frank Barajas will be serving Dinner with Santa, and special Three-Course dinners on Christmas Eve, Christmas Day, and New Year’s Eve. To ring in the New Year with gusto, there will be New Year’s Eve bubbles at the restaurant’s bar with DJ entertainment and a balloon drop.

Dinner with Santa at Pequín Coastal Cocina

Guests will enjoy their choice of delectable dishes from the customary Pequín Dinner Menu created by Chef Frank Barajas, perhaps a Selection of Salsas or Seafood Pozole Verde or Marinated Baja Chicken is your choice? Kids receive a free holiday cookie and a photo op with Santa with the purchase of a kids’ meal. Everyone can have a picture taken with Santa Claus for a $10 suggested donation, which will be given to Surfing for Hope, a non-profit organization created to help inspire people challenged by cancer through the positive energy of surfing.

Special Three-Course Christmas Dinners

Chef Frank Barajas and his talented culinary team have created a festive three-course dinner for friends and family to celebrate together on Christmas Eve and Christmas Day.

First Course
Salad composed of winter greens, pomegranate arils and goat cheese
Apple Butternut Squash Bisque with pepita seeds

Second Course
Prime Rib accompanied by potato puree, creamed rainbow char, creamy horseradish and au jus
Veggie Enchilada Nogata with arroz verde and beans.

Third Course
Eggnog Con Leche
Apple Pie with dulce de leche

$90 per person, exclusive of tax and gratuity.

Saturday, December 24, and Sunday, December 25, from 5:30 to 9 p.m.


It’s going to be a very lively and celebratory evening at Pequín Coastal Cocina. Live music with Chet Hogoboom, a Balloon Drop, and bubbles – lots of bubbles – all to compliment the whimsical flavors of Chef Frank Barajas’ Baja-Coastal Cusine.

New Year’s Eve Dinner at Pequín Coastal Cocina

The Three-Course New Year’s Eve celebratory menu at Pequín Coastal Cocina is very special to Chef Frank Barajas since it’s the restaurant’s first New Year’s Eve festive dinner. For Starters, the choice is Farmers Market Salad with lemon vinaigrette or Poached Pear Salad with balsamic reduction. Next guests enjoy either Warm Spiced Short Rib with potato puree and roasted squash hash with a pomegranate reduction or Butternut Squash Tamales with chef’s house-made walnut sauce and rice and beans. For a sweet and fun beginning to 2023, everyone gets Mexicali Chocolate Mousse topped with pop rocks.

New Year’s Eve Bubbles and Appetizers at Blend Bar

A most lovely and joyous way to ring in the New Year, Blend bar at Pequín will be pouring bubbly flights and offering delicious endless appetizers. From 10 p.m. to 1 a.m., entertainment will be provided by a DJ, and a balloon drop happens at midnight.

$55 per person, exclusive of tax and gratuity.

Saturday, December 31, into Sunday, January 1, 2023, from 9:30 p.m. to 1 a.m.
